A few questions about Auto and Manual Flight

I am a new Airbus owner and have version 1.1 of the A319/A320. After a few flights I have noticed the following issues.

1) When flying on A/P but not in managed mode, I have the speed and altitude run away. I have speed set at say 240 knots, Altitude at 5000ft. No dot next to speed/alt, so aircraft should follow but the speed keeps climbing and the altitude keeps climbing beyond set point. What am I doing wrong here?

2) I thought on Airbus the FBW system held the pitch and roll angles when you let go of the stick. In my case the roll works but pitch does not. Especially and issue when flying a manual landing. Is this not modelled or am I doing something wrong. Does A/P have to be engaged for this to work?

1) Check your speed/thrust mode on the FMA: You are not in TOGA LK, but in CLB, aren't you?

2) Have you made sure your yoke/joystick has been calibrated, includes a small null zone, doesn't spike, and was centered while you were checking out the FBW?
