That's not the main problem. The problem is simply that the data you need to make a somehow realistic model are not available as in the past. In the past you could get tons of FCOM and other docs as pdf. Now this is gone. All data are "hidden" in electronic devices and these devices are not available to people outside the manufacturer and airline staff. I totally agree with this statement.
Im a certified engineer on the Airbus 350 and the documentation provided is so crap compared to legacy aircraft. It barely skims the essence of how the systems operate and in some cases it’s even lacking certain features. I did my type training with Airbus, and even the Airbus employed instructors struggled to describe certain system logics based on the information given to them.- 3

What a nice little document to explain FFL (F French Logic, not going to explain the first F). I actually learned something new since pushing and pulling the FCU knobs have become muscle memory and I never realised the logic behind it. Pushing and pulling control to and from the airplane was a very good explanation for that, well done!

For example a dual-engine failure. Ours will not behave as the real one in regard to messages on the displays. But it simply has never happened as far as everybody knows. Same as an APU fire, never happened. Not in the hundreds of thousands of hours the A330 flew.
If you are looking for a simulation that simulates the simulators pilots train on, this is not what you want.
I prefer to see an aircraft that simulates the correct procedures correctly for day to day operation then an aircraft with advanced failures, so I appreciate the priorities set forward by Aerosoft.
But regarding the statement that a dual engine failure has never happened on the A330, well the crew and passengers on Air Transat 236 who glided for almost 20 minutes disagrees

I also jumped to the conclusion that it might be the 14 day notice post since the navdata on the MCDU expired in 14 days.
But then I realised that the 2305 airac cycle expires 14th June anyways
