I used to think so too, but after actually learning to fly the big ones, with the help of Mr. Smith of FSFlyingSchool, I Love to fly Boeing 737´s and ´747´s So rewarding to fly and land such a biggie... :-) Your choice of course, as long as YOU have fun... When you use an aircraft in FSFS that is not recognized by the FSFS system, it creates values based on the info it can find in the aircraft folder in FSX. IF those values are wrong, you can create a userfile - and change the wrong values. You simply start up a flight in FSFS using for instance the Catalina, and then FSFS estimates values. You disconnect FSFS and go to the "aircraft" tab. You put a bullet in the "user specified data" and make the appropriate changes (see what you can find on the web, concerning flap positions, speeds and all if you like) then press "save changes" and you have created a userfile for that aircraft. Then, from now on, when you choose this aircraft, FSFS will use YOUR values every time, or until you make other changes of course... SO you can use the Catalina if you want. You cannot change any values if you are connected in FSFS, so you must have disconnected - BUT my guess is that you didn´t save the changes, and then FSFS will re-estimate the same wrong values again...
