Why is it so hard to take-off with a tow with crosswind?

Indeed it can be.  The main problem is actually getting off the ground.

The problem is caused by the fact that you use your rudder to stay on the centerline of the runway and to point your aircraft slightly into the wind. Now at the same time you have the glider that 'pulls' the tail backwards and counters the effect of the rudder.  So you need to apply more (sometimes alot more) rudder.

 

The moment you are in the air the issue is less problematic as you can use the ailerons to slightly bank into the wind.
