Shift E, Shift E 2, etc. For the cargo doors, you need to assign a key in the sim controls. From the operating manual: "The cargo doors may be opened with the command for "Wings fold/unfold"." The DC8 uses the wing fold command so you can map to any key you like. The variable is (A:FOLDING WING HANDLE POSITION,bool). 0 is closed 1 is open.
